FS 101 - Introduction to Food Science with Lab Pre- or Co-requisite: None. Requirement Fulfillment: Minor This course will explore the science behind food production, preparation, and distribution. Topics will include the physical and chemical properties of food, food microbiology, safety and engineering, and sustainable systems of food production. In the lab, students will do experiments that involve basic cooking techniques to demonstrate the relationships discussed in lecture. Through these explorations students will gain hands-on experience with using the scientific process to improve food quality and safety.
